Take-out Beef & Broccoli (in a crockpot)


Take-Out Beef & Broccoli in a Crockpot
Yield: 6 servings

Ingredients:
3 lb. boneless, beef chuck roast, sliced into thin strips
2 cup beef consumme or beef broth
1 cup low sodium soy sauce
2/3 – 3/4 cup dark brown sugar  (or light brown sugar + a little molasses)
1 tbsp. sesame oil
1 tsp oyster sauce (optional)
6 garlic cloves, minced
4 tbsp. cornstarch
8 tbsp. sauce (from the crockpot after dish is cooked)
Fresh broccoli florets, about 2 large crowns  

White rice, cooked

Instructions:
 In the insert of the crockpot, whisk together beef consume, soy sauce, dark brown sugar, sesame oil, and garlic.
 Gently place your slices of beef in the liquid and toss to coat.
 Turn crockpot on low and cook for 6 hours.
When done, in a small bowl, whisk together cornstarch and cooking liquid to create a slurry, pour into crockpot, stir to mix well. This is necessary. If not mixed well, cornstarch will clump.
Cook on low for an additional 30 minutes to thicken up the sauce. 
10 minutes before the beef is done, toss in the broccoli florets with beef and sauce. 
Serve hot beef, broccoli, and sauce over white rice.
